Grilled Chicken With 20 Pepper Cranberry Glaze |
1 8 oz. jar Red Lion Spicy Foods 20 Pepper Cranberry Jam
2 tsp. cumin
1 tsp. lime zest
2 tbsp. fresh lime juice
1 jalapeno or serrano chile, seeded and diced
1 tbsp. Butter
1 whole chicken, cut up
salt and black pepper
Combine all ingredients except the chicken, salt and pepper in a saucepan. Whisk thoroughly.
Cook over medium heat, whisking often, until smooth, about 10 minutes.
Pre-heat a gas or charcoal grill.
Cook the chicken until juices run clear, about 25-35 minutes depending on your grill.
During the last 10 minutes if cooking time, brush glaze onto chicken, turning occasionally.
Serve with roasted corn on the cob.
