Red Lion CASI Chili

 

Dice 3 pounds of mock tender beef into 1/4 inch cubes.  Sear the beef in a medium-sized pot with:
1 1/2 Tbs. Red Lion Spicy Foods Co. Medium Chili Mix
1/2 Tsp. Cayenne Chile Powder
1/2 Tsp. Ancho Chile Powder
1/2 Tsp. New Mexican Chile Powder
1/2 Tsp. Paprika
1/4 Tsp. White Pepper
Add to the pot:
1 Tbs. Onion Powder
1 Tbs. Garlic Powder
1 Tsp. Cumin
1/2 Tsp. Ancho Chile Powder
2 Tsp. Instant Chicken Bouillon
2 Tsp. Instant Beef Bouillon
1 - 14.5 oz. Can Chicken Broth
1 - 8 oz. Can Tomato Sauce
2 Serrano Chiles, pierced but whole

 

Bring to a boil and cook for 1 hour, covered, until the meat is tender.  Remove the chiles and add:
2 Tbs. Red Lion Spicy Foods Co. Medium Chili Mix
2 Tbs. Red Lion Spicy Foods Co. Mild Chili Mix
1 Tbs. Cumin
1 Tsp. Sazon (We make our own to eliminate MSG.  The ingredients for a batch are 1 Tbs. salt, 1 Tsp. garlic powder, 1 Tsp. Cumin, 1 Tsp. Coriander and 1 Tsp. Annatto)
1 Tsp. Garlic Powder
1/2 Tsp. Tabasco Chile Powder

 
Adjust liquid by adding additional chicken broth, if necessary.  The consistency should be moderately thick, like gravy.  Reduce heat, cover and cook for 30 minutes.  Then add:
1 Tbs. Red Lion Spicy Foods Co. Mild Chili Mix
1 Tsp. New Mexican Chile Powder
1/2 Tsp. Cumin
1/2 Tsp. Garlic Powder
1/2 Tsp. Onion Powder
1/2 Tsp. Sazon

 

Cook an additional 10 minutes, adjust the consistency by adding chicken broth, if necessary.  10 minutes before turn-in add:
1 Tsp. Cumin
1 Tsp. Red Lion Spicy Foods Co. Mild Chili Mix
1/2 Tsp. Ancho Chile Powder
1/2 Tsp. New Mexican Chile Powder
1/4 Tsp. Brown Sugar
3 Tsp. Paprika
Juice from 1/2 Lime
