||Red Lion Spicy Peanut Brittle
1 cup sugar
1 cup dry roasted, unsalted (or raw) peanuts
1/2 cup light corn syrup
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
1 tablespoon butter
1 1/2 teaspoons baking soda
Red Lion Spicy Foods XX Hot Chili Powder - 1 tablespoon for pleasantly spicy, 2 tablespoons for good heat.
More than that and you're on your own.
In a large microwave-safe bowl, combine the sugar, corn syrup and salt.
Microwave for 5 minutes on high (100%) power. Stir in the peanuts.
Microwave on high for 2 to 5 minutes, stirring every 2 minutes
or until mixture is light brown.
Add the butter, vanilla, chili powder and baking soda.
Stir until mixture is light and foamy.
Pour mixture onto a large (10 x 15 works well) foil-lined or well buttered cookie sheet.
Spread to 1/4 - 1/2 inch thickness.
Allow to cool completely, then break into bite-sized pieces.
Store in an air-tight container.
