Serrano Red Enchilada Casserole |
1/2 lb. ground turkey - crumbled
1 medium onion - chopped
1 large clove garlic - minced
1 16 oz. can chili beans
1 tsp. Mexican oregano
1 tbsp. chile molido, or chili powder
8 oz. Red Lion Spicy Foods Company Serrano Red Salsa
1/2 cup water
4 corn tortillas
1/2 cup shredded Monterrey Jack cheese
Place turkey, onion and garlic in a pre-heated skillet and cook until turkey
is no longer pink, stirring often.
While turkey is cooking, combine beans, Mexican oregano, chile molido, salsa and water
in a saucepan. Bring to a boil and simmer for 5 minutes.
Pour a small amount of the salsa mixture in the bottom of a small casserole dish.
Combine the rest of the salsa mixture with the turkey mixture.
In the casserole dish, alternate layers of tortilla, turkey mixture and cheese.
Bake in a preheated 375 degree oven for 25 minutes.
Makes 4 servings.
